How We Make Food Allergies a Top Priority on Campus
LVC Dining Services, powered by Metz Culinary Management, is committed to providing a safe, accessible, and supportive dining experience for all students, especially those with food allergies and dietary restrictions. From our online menu to our staff training, here are a few ways that we have ensured a pleasurable and safe dining experience for all students! We Provide Transparency with Every Meal To ensure the utmost clarity and accuracy, we utilize Nutritics, a trusted standardized recipe and nutrition database. Nutritics enables us to consistently display detailed ingredient information, allergens, and nutritional facts for all the foods we serve. Our online menu specifically labels the “Big Nine” allergens: milk, eggs, peanuts, tree nuts, fish, shellfish, soy, wheat, and sesame. Any menu item that contains one of these allergens or is processed in a facility where allergens may be present is clearly marked, and students can go one step further to view their options by filtering the menu to display only items that are allergy-free and safe to consume. Additionally, for students with allergies outside of the top nine, we provide full ingredient and nutrition information to help identify other potential allergens. This menu information can be found here or can be found by scanning one of the many QR codes in the dining room. Our Staff are Trained for Your Safety Safety starts with our team. We mandate AllerTrain certification for all team members to ensure they have a strong understanding of food allergies, their risks, and safe preparation methods. Beyond AllerTrain, we also have 31 team members who are ServSafe management certified, giving our staff advanced training in food safety protocols, safe handling, cooking, and storage practices, as well as emergency response if a student has a reaction. During routine pre-service team huddles, we review the top allergens contained within each of our menu items available, so that our staff members are educated on what we are serving and prepared to answer any questions. We Implemented an Allergy 411 Program to Increase Awareness and Support Our Allergy 411 program was designed to educate students about the tools available to help them make informed decisions and dine with confidence. Through this program, we encourage students to utilize our resources and reach out to staff with any questions about menu items. Each dining hall staff member is ready to assist in answering questions and making accommodations for any dietary needs. We Take Care in Serving Each Individual Student If a student has a more specific dietary requirement, we often prepare special individual meals to ensure they have access to the same variety of choices as other students with their dietary restrictions. Often, these meals are pre-packaged to further minimize any risk of cross-contamination. If you are a current or prospective student with food allergies, intolerances, or specific dietary needs, we highly encourage you to reach out to our on-campus dietitian, who is here to answer questions, provide guidance, and address any concerns. We are here to help you navigate dining options that fit your needs, so you can dine safely and comfortably on campus. |
Allergy Disclaimer: Metz Culinary Management makes every effort to identify ingredients that may cause allergic reactions for those individuals with food allergies. Items marked gluten friendly are made with no gluten-containing ingredients. Effort is made to instruct our food production staff on the severity of food allergies. Because of the number of meals served and the number of items used each day, along with food product changes from our food vendors, it cannot be guaranteed that every allergen in the food served will be identified and labeled. The possibility that manufacturers of the commercial foods we use could change the formulation at any time, without notice also exists. Guests concerned with food allergies must be aware of this risk. Metz Culinary Management cannot assume any liability for adverse reactions to food consumed, or items one may come in contact with while eating at any Metz-operated facility or catered event. Guests with life threatening food allergies who may need to use an epi-pen should be carrying their own. Metz team members are NOT trained to administer epi-pens and CANNOT provide or administer them.
